My Boo loves casseroles. So, we tend to eat more than our fair share. He's always looking for new recipes and I'm always experimenting with them to find something he hasn't tasted before. They're not all successes. Some of them have ended up as "treats" for the dogs. But this is one of his newest faves.


Granny Mae Wisdom--Just because you can doesn't mean you should.

You can adjust the sour scream and ranch dressing to suit your tastes.


Cheesy Hash Brown Casserole

1 cup Bacon Bits

1/2 cup onion

1 package hash browns (if frozen, thaw before using)

3 cups sharp cheddar cheese, shredded (reserve enough to use as a topping)

Salt to taste

Pepper to taste

1/2 cup ranch dressing (or to taste)

6 eggs

1 cup sour cream

1 cup milk

Diced tomatoes and scallions for garnish

Steps:

1. Heat oven to 375 degrees F (190 degrees C).


2. In a very large skillet, saute onions in 1-2 tsp of butter or olive oil until they're transluscent.


3. Stir in bacon bits.


4. Mix in hash browns and cheese.


5. Add salt & pepper to taste.


6. Toss in ranch dressing.


7. Place in a greased casserole dish


8. Whisk the eggs.


9. Add milk and sour cream to eggs.


10. Pout the egg, milk & sour cream mixture over the eggs.

11. Cover with foil & bake for approximately 35-40 minutes


12. Remove foil.


13. Add the additional cheese and tomoatoes.


14. Bake about 10 minutes until cheese is melted.


15. Garnish with scallions.


16. Enjoy!
